Method

1. Bring a large pan of water to a simmer. Add the eggs and cook gently for 7 mins.
2. Remove the eggs with a slotted spoon and transfer to a bowl of cold water. Once cooled, carefully peel off the shell and slice each egg in half.
3. Meanwhile, whisk the oil with the lemon zest, juice and yogurt, and season well.
4. Shred the chicken and toss with the olives, sundried tomatoes, basil, lettuce, and croutions.
5. Pour in the dressing, season and toss together.
6. Divide the salad between two bowls and top with the egg halves and pistachios.
