Method

1. Break up the chocolate and spread in a bowl
2. Float the bowl over hot water to gently melt the contents
3. In a large clean bowl, separate the egg whites, being very careful to exclude all yolk
4. Keep the yolks in a smaller bowl
5. Whisk the egg whites first, to soft peaks, then slowly add 50g sugar and whip to stiff peaks
6. Add the rest of the sugar to the yolks and whisk until pale yellow
7. Remove the melting mixture from the heat (ensuring most lumps have completely melted)
8. Add the vanilla extract and yolk mixture to the melting chocolate, and gently mix through
9. Add a small spoon of the whites to the chocolate mixture and fold through
10. Add all of the chocolate mixture to the whites and fold gently until completely mixed
11. Pour the mixture into ramekins, add any garnish, and refrigerate until set (at least 4 hours)
